Chef to demonstrate uses for microgreens

UWindsor executive chef Paolo Vasapolli will demonstrate creative and delicious uses for microgreens at an urban farm store in Kingsville on Friday, March 19.

“I am a huge supporter of local and farms,” he notes. “They asked me if I could help promote the different applications and versatility of using microgreens for their grand opening.”

Ortaliza grows the vegetables — harvested just a few days after they germinate — indoors, using no soil or natural light to maintain a controlled environment.

Vasapolli notes they pack a nutritional punch.

“Microgreens provide lots of health benefits: antioxidants, fibre, potassium, vitamins, and boosts to immune systems and bones,” he says.

His presentation begins at 10:30 a.m. in the store, located at 25 Main St. West, Unit 1, Kingsville.
