Salad offers a summer approach to dining gluten-free

When it comes to cooking, says Paolo Vasapolli, executive chef in Food and Catering Services, “Passion is the main ingredient.” But when entertaining, other ingredients may matter just as much to your guests—especially those with food allergies or other dietary restrictions.

“It is important to serve dishes that everyone can enjoy,” he says. “That can mean adding some new recipes to your repertoire.”

He suggests a salad for a light summer meal, and offers this recipe for a gluten-free twist on an old favourite:

Garlicky Gluten-free Chicken Caesar Salad

Ingredients

  • 3 tablespoons mayonnaise
  • 4 tablespoons parmesan cheese, grated
  • 1 anchovy fillet
  • 2 teaspoons red wine vinegar
  • 2 cloves garlic, minced
  • splash of Worcestershire sauce
  • splash of Tabasco sauce
  • 3 hearts of romaine lettuce, leaves whole
  • 3 chicken breasts, cooked and sliced
  • 3 slices of gluten-free bread, diced, toasted in the oven and cut into 1-inch pieces
  • salt and pepper to taste

Directions

In a food processor, combine mayo, cheese, anchovy fillet, vinegar, garlic, Worcestershire and Tabasco. Season with salt and pepper to taste.

In a large glass bowl, toss the lettuce leaves until lightly coated with the dressing. Top with gluten-free croutons and chicken slices and serve immediately.
