Wrap up leftovers for a healthy second meal

Using up leftovers can be a challenge, but the smart cook knows they can be a timesaver in the kitchen, says Paolo Vasapolli, executive chef in Food and Catering Services.

“Leftovers are already cooked, so using them can be easier than starting fresh every time,” he says. “It always breaks my heart to see food go to waste because people don’t have any ideas about how to use it the next day.”

Vasapolli presents this quick and easy recipe, which he says is “great way to use leftover beef.”

CheeseSteak Wrap (makes two)

Ingredients

  • ½ sweet onion chopped
  • 1 green pepper chopped
  • 6 oz of leftover beef or steak
  • 2 oz of shredded cheese blend
  • 2 large whole wheat tortillas
  • ketchup or other sauce

Directions

Heat up a pan over medium heat and add a couple of tbs of olive oil. Add the onion and cook until translucent, then add the peppers and season with salt and pepper.

Cook for 2 to 3 minutes and add the leftover beef—shredded, chopped, or julienned—and cook for another minute or two until the beef is fully warm through. You don’t want to overcook it.

Lay the tortillas on a baking sheet, split the mixture between the two tortillas and top each with a little cheese, bake at 350 degrees Fahrenheit to melt the cheese.

Remove from the oven, top with a little ketchup, salsa or your favourite barbecue sauce, wrap them up and enjoy!
