Turn leftovers into turnovers with post-holiday recipe

Looking for a new way to enjoy the leftovers from your Thanksgiving feast?

Executive chef Paolo Vasapolli of Food Services suggests combining turkey, stuffing, gravy and cranberry sauce in a puff pastry turnover. His recipe will make eight triangle-shaped savouries.

Turkey and stuffing turnover

Ingredients

  • 4 ounces of leftover roast turkey, chopped
  • 4 ounces of leftover stuffing, broken up
  • 4 ounces of leftover gravy
  • 4 ounces of leftover cranberry sauce
  • 1 egg
  • puff pastry sheets (purchase pre-made from your grocer’s freezer section)

Directions

Preheat the oven to 400° F.

While your puff pastry is thawing, combine turkey, stuffing, gravy and cranberry sauce in a small bowl. Mix to incorporate the ingredients.

Once the pastry is thawed, cut each sheet into four squares. Divide the filling between the squares keeping to the centre.

Wet the edges of each square with water and fold diagonally into a triangle, pinching edges to seal completely. Beat the egg and mix in a little water, then brush the resulting wash over each turnover.

Place the pastries on a cooking sheet lined with parchment paper. Bake for 15 to 25 minutes, depending on your oven, until golden brown.
