Food outlets to introduce sustainable seafood

Campus food outlets will serve cod and salmon certified as being sustainable under the Ocean Wise Seafood program.

“This is the latest step in our ongoing journey towards sustainability,” says executive chef Paolo Vasapolli. “We are proud to partner with Ocean Wise in offering our patrons foods they can be confident protect aquatic environments.”

Ocean Wise is a Vancouver-based conservation organization tackling three major challenges: overfishing, pollution, and climate change. Its standards for sustainable fishing and aquaculture practices include harvest levels that ensure healthy and resilient stocks and limiting negative impacts on habitats and non-target species.

As an official partner, the University of Windsor commits to labelling ecologically sustainable seafood products with the Ocean Wise symbol. The organization has in turn listed Food and Catering Services on its national map of participating suppliers.

“It’s all about providing food that is healthy for ecosystems as well as for diners,” Vasapolli says. “We all have to do our part to tackle these global issues.”
