Fresh to Go line offering healthy choices for campus diners

Students and employees looking for a fast, healthy meal shouldn’t overlook the Fresh to Go items offered by Food Service outlets across campus, says executive chef Paolo Vasapolli.

“We offer salads, sandwiches and platters that really pack a nutritious punch,” he says. “We are always updating what we carry to offer more choices to our patrons.”

Among the new tastes he is touting are $3.50 salad cups with such worldly flavours as curried chickpeas, Thai tofu and edamame, and Asian kale and quinoa. More traditional favourites include gourmet salads at $4.99: spinach and strawberry with balsamic dressing or a cranberry-walnut salad with crumbled goat cheese.

“These are affordable, fresh salads that taste great and are good for you, too,” says Vasapolli.

The sandwich line includes a turkey pesto kaiser with cranberry mayonnaise and a chicken club, as well as vegetarian options like a caprese with pesto, arugula, tomato and mozzarella served on a multigrain Kaiser or the vegan grilled vegetable with hummus.

“We are sensitive to the varied needs of our clients and try to provide a variety of choices that meet everyone’s dietary requirements,” he says, noting that Food Services is looking to expand its gluten-free and vegan offerings. “If you have a specific request, please bring it to our attention.”
